將熬開的豆漿一飄一瓢地倒進豆腐包中,另一個人就一搖一搖地晃動著豆腐包,使純豆漿從豆腐包中漏下來,流到放在下面的大缸裡。到一定的程度,要用夾板夾住豆腐包中剩下的豆腐渣,將殘留的豆漿擠淨。直到所有的豆漿都過完包了,豆腐渣就和豆漿完全分離了。

將豆漿放在大缸裡稍微涼一下以後,就開始點鹵水了。豆腐倌將鹵水盛在一個小碗裡,倒裡邊一點,就用勺子在豆漿中攪一攪,眼睛始終注意著豆漿的變化。再放一點鹵水,再攪一攪,直到認為滿意為止。這是做豆腐的最關鍵的手藝。

這時候,把缸的蓋子蓋上,等一會兒,看到豆漿已經成了腦了,裡邊有一朵一朵的豆腐花,與清水相伴的時候,也就是豆漿分離為豆腐花和清水的時候,就可以壓豆腐了。

先將壓大豆腐的木框擺好,用那種大豆腐包,即極為寬大的方形豆腐包放在木框之中,開始將豆腐花一瓢一瓢地舀到木框裡,水嘩嘩地從下邊流出來,豆腐花沉積在木框裡。等到木框裡的豆腐花積滿了,將豆腐包的四角翻過來,將豆腐花包住,上面用木板壓好,上邊再用石頭壓好。等到豆腐不老又不嫩的時候,揭開木板和豆腐包,豆腐就做成了。用刀割成一塊一塊的,就是好吃的豆腐了。
內脂豆腐制作方法
內脂豆腐以β一葡萄糖酸內脂為凝固劑,其工藝簡單,質地細膩潔白,保質期長。現介紹制作方法如下:
1.泡豆選用豆臍(或稱豆眉)色淺、含油量低、粒大皮薄、粒重飽滿、表皮無皺而有光澤的大豆。將大豆洗淨,在春秋季水溫10ºc—20ºc時,浸泡12小時—18小時;夏季水溫30ºc左右;浸泡6小時—8小時(每24小時換水);冬季水溫5ºc,浸泡約24小時。水質以純水、軟水為佳。用水量一般以豆水重量比1:3為好,浸泡好的大豆約為原料干豆重量的2.2倍。泡好的豆要求豆瓣飽滿,裂開一小線。但浸泡時間如果過長,會影響出漿率。

2.磨漿一般選用能進行漿渣自動分離的磨漿機,粗磨、細磨共2次--3次,盡可能提高大豆蛋白的抽提率。由於不再像用鹵水、石膏作凝固劑生產豆腐那樣還需壓搾成型,所以磨漿過程中加水量的多少就決定了成品內脂豆腐的老嫩。一般做老豆腐時水與干豆的比例是3—4:1,做嫩豆腐時水與干豆的比例是6—10:1。第一次粗磨時加水量為總加水量的30%,第二次調節磨漿機螺旋進行細磨,加水量為30%,第三次的加水量為40%,盡可能地把豆渣裡面的漿沖洗出來。磨好的渣應手感細膩無顆粒。

3.煮漿,把磨好的漿放在不銹鋼制的煮漿桶裡,用蒸氣將漿煮至60ºc-70ºc時放人約0.3%的食用消泡劑,把加熱過程中產生的泡完全消掉為止。然後繼續加熱把
